Monkey Pesto Face - Kids Plant-Based Dinner Plate

Our 3 boys have had so much fun creating fun recipe plates that they enjoy to eat healthy plant-based meals.  The creamy raw basil pesto has been a favorite for them.  Are you looking for a fun, dairy-free pesto sauce for your kids and family? Our plant-based boys know how dairy has made their tummies hurt after eating, so they have had fun creating a dairy-free version in the kitchen with us.  Sometimes they love throwing some organic ketchup on top to make the fun faces. Hope you enjoy creating this fun plate with your kids like we have.  


  • 2 cups basil
  • 1 cup cashew
  • 1 lemon juiced
  • Zest from 1 lemon
  • 1 garlic clove
  • 1/2 cup filtered water
  • Sea salt to taste


1. Zest the outside of 1 lemon with a hand zester.

2. Juice the lemon that was zested. Throw all in a high speed blender or a food processor with rest of the ingredients.

2 Week Postpartum Workout | Vegan Mom

Are you anxious to get back into shape after having your baby or just ready to get toned up?  After  having my 4th baby, as a vegan mom, I couldn't wait to get back toning up my body.  Prior to getting pregnant with Chel,  I was competing in my first two bikini fitness competitions, winning first place in my class.  I did all my training, at home, with my three young boys with no weights.  I was able to keep my body in great shape, thanks to living a super awesome vegan lifestyle.  

Prior to living a vegan lifestyle, 5 years ago, I was experiencing digestion issues, could not fall asleep easily, was inflamed, had a hard time concentrating, couldn't loose that extra 10 pounds no matter what I did, I felt like I needed to take a nap every time I ate eggs, meat, or grains, and I felt like my family kept getting some kind of flu.

Instant Pot Sweet Vegan Curry

Do you have an instant pot and are looking for new recipes to make?  We just got one last month and have been experimenting with some super quick, easy and delicious vegan, plant-based, gluten free recipes.  We will be sharing more with you for the next couple of months.  

When you have 3 boys and a newborn baby girl, all you can think of is to make something nutritious that is super easy, quick, will satisfy the entire family and something that you can save for leftovers the next day. We have made just this in our new instant pot. Let us know how you enjoy it.

Vegan Love Burger

We have been on a quest to make a gluten-free, dairy-free, grain-free veggie burger  that is both sweet and satisfifying.  Most veggie burgers we find at either restuarants or grocery stores contains either gluten, grains, or dairy.  I think we have just made an epic vegan burger that is super sweet and satisfying just in time for Valentines Day.  This burger you can enjoy with your loved one, a friend or family member for Valentines Day or anytime of the year.  We had our three boys taste test this burger to make sure it was kid-friendly.  At first we thought they may not like the beets, but were super excited it was a winner. The maple syrup in the sauce did the trick!

4 Week Postpartum | Full Body Workout

Baby Chel has joined our family only 4 short weeks ago.  Since 2 weeks old she has been enjoying doing workouts with me. Since we have moved to Hilo, Hawaii, we do not have a gym to go to so I have been exercising with my three boys and baby Chel.  I'm the "no excuses" kind of mom.  Any obstacle that comes my way, I will find a way to make it better or work around it.  This is me getting toned up while playing with my kids.

Recovery Update w/ Chiropractic Healing

Along with Faith, clean plant-based eating, rest and exercise a very important part of my healing has been Chiropractic Care at Cascade Chiropractic in Folsom, CA with Race and Sara Irby.  

Just after my first chiropractic adjustment from Race this week I felt my body shift from a feeling of fight or flight (sympathetic activity) to rest and repair (parasympathetic response).  Now I could finally be in a state of healing and repairing my body.  I'm so thankful for his healing hands.

Battle with Sepsis...It can happen to Anyone

It's Monday, Jan 29th, 2018 and I am so grateful to be on the TRAIL to RECOVERY.  The last two weeks have felt like a battle with the DOOR of DEATH.   On this fifth day out of the hospital I felt compelled to share my story to give FAITH, HOPE, and GRACE to others that are suffering and to prevent so many from suffering.  In times of trouble we pull inside ourselves to a place no one else can go and through Faith God is there to guide us and heal us.  We can prepare ourselves by hearing the Word of God and seeing miracles and victories he has done. 

We can also prepare our body and mind with a lifestyle of self-care.  Taking care of our bodies by making healthy choices everyday from the food we eat, getting plenty of rest, reducing stress, exercising, and challenging our mind to grow and learn everyday will put us in the best position to survive and thrive.  

I thank God, my family, friends, the doctors, nurses, and the choices I made...
